Vegan Lemon Bars Recipe

Vegan Lemon Bars soars high as a blissful delight for every athlete who don’t want to go wrong in their diet. Try some of this simple yet awesomely healthy dessert bars and fill in your sweet cravings in a light and healthy way.

If there’s a treat most people like, one of the most popular way to refresh a day is having a cool, tangy quenching taste of a lemonade. But what if your favorite refreshment comes in a bar? Awesome, right? Read on and indulge in these refreshing yet healthy dessert fit for one’s healthy active lifestyle. The goodness of healthy and refreshing dessert in a bar!

Ingredients:

For the crust:

  • 1 cup of almond flour
  • ½ cup of unsweetened finely shredded coconut
  • 2 tablespoons unrefined melted coconut oil
  • 2 tablespoons pure maple syrup
  • 1/8 teaspoon refined grain sea salt
  • butter for pan basting

For the filling:

  • 1 1/3 cups firm silken tofu (Morinu brand – must be ‘firm’ silken to retain shape of the bars)
  • ½ cup pure maple syrup
  • 3 tablespoons finely grated lemon zest
  • 1/3 cup fresh lemon juice
  • 1 ½ tablespoons arrowroot powder
  • 1/8 teaspoon turmeric (optional, for coloring)
  • A pinch of fine sea salt
  • vegan powdered sugar for dusting (optional)

Procedure:

Step 1. Position the rack in the center and pre-heat oven to 350°F.

Step 2. Baste with butter a 9-inch square baking pan.

Step 3. Lay 2 layers of parchment paper in the baking pan. Making extra edges for easy lifting of the bars later.

Step 4. In a wide medium bowl, combine and mix well the ingredients for the crust.

Step 5. Once mixed, pour over the batter unto the baking tray lined with parchment paper.

Step 6. Using your hands, press firmly to flatten out the mixture.

Step 7. Bake the crust in the oven for about 10 to 12 minutes. Remove from oven set aside in a wire rack to cool.

Step 8. While the crust is baking in the oven, prepare the filling while waiting.

Step 9.   Using a hand or stand mixer, whip the tofu for about a minute.

Step 10. Add the remaining ingredients for the filling and beat 2 to 3 more minutes.

Step 11. Scrape and empty the dough filling from the bowl into the baked crust in the tray.

Step 12. Bake for 35 minutes or until the edges colors golden brown and the center is evenly set.

Step 13. Set aside to cool completely.

Step 14. Refrigerate for an hour to fully set.

Step 15. Dust with powdered sugar.

Step 16. Slice into bars and serve.
